As a "Striker" class, I performed a "Baerdin In The Woods" quest with a teammate in a group.
After completing the quest and obtaining the reward, there ware such items left in my inventory (visible on the picture attached).
The only way is to delete them.
This isn't a bug, you only need to retrieve one pelt for your specific class and that's consumed by hand in. You picked up surplus to requirement and deleting them is the correct solution here. The diseased animals will drop the pelts regardless of whether or not you even have the quest active.
