This isn't a bug, you only need to retrieve one pelt for your specific class and that's consumed by hand in. You picked up surplus to requirement and deleting them is the correct solution here. The diseased animals will drop the pelts regardless of whether or not you even have the quest active.
Honestly my favourite thing about this game is the amount of in-world downtime that's encouraged. Including nights. When playing solo, yes it can be frustrating to be out in the wilderness looking for resources to gather, but of course it is, it's night time, gathering is a day time activity. So...
